Plant-Based Teriyaki Pad Thai

This is one of my favorite meal prep recipes. General Tso's meets pad thai... Simple and easy!



 

Recipe

Prep time: 10 min

Cook time: 30 min

Servings: 4-5

Ingredients

  • 1 package of organic, firm, tofu

  • 1/2 cup of almond flour

  • 2 TBSP of avocado oil

  • 16 oz bag of rice noodles

  • 2 cups of broccoli, frozen

  • 1/4 cup of green onions

  • 3 TBSP of soy sauce

  • 8.5 oz bottle of teriyaki sauce

  • 1 TBSP of garlic, minced

  • 1 TBSP of ginger, minced


Directions

Prepare Tofu:

  • Drain

  • Dice

  • Mix in bowl almond flour, and avocado oil

  • Spread breaded tofu on a sheet pan evenly

  • Bake at 450 until brown and crispy


Prepare noodles:

  • Bring to boil a large pot of water

  • Cook noodles as directed on package



Prepare broccoli:

  • In a large pan, sautee green onion, garlic, and ginger

  • Mix in broccoli

  • Cover pan and cook until tender



ADD IT ALL TOGETHER

  • Mix noodles into pan with broccoli (I mixed the tofu first in the pictures)

  • Add soy sauce and teriyaki sauce

  • Add cooked tofu



Eat, serve, store, and enjoy!
