Plant-Based Pasta Bake

Easy, convenient, high protein dinner without the meat. Made with ONE PAN. Includes leeks, cauliflower, and chickpea pasta.

This is one of my favorite meal prep recipes! I've made this 4 times now- it is even approved by my boyfriend's family! You would never guess that it's hEaLtHy :)


I got this recipe from Pinterest after watching the movie The Game Changers on Netflix. I was so amazed by the successful plant-based athletes and how much they were able to optimize their bodies to out-compete their competitors. Inspired, I looked up some recipes, found this one, and swapped the ingredients to make it 100% plant-based!


Plant-Based Pasta Bake

Makes 4-5 servings.

Prep time: 5 min

Cook time: 30 min


Ingredients

  • 1.5 jars of organic tomato basil pasta sauce

  • 1.5 boxes of Banza cavatappi chickpea pasta

  • 1/2 head of fresh cauliflower, chopped

  • 1 organic leek, chopped

  • 1/2 cup of green onions, chopped

  • 4 TBSP organic avocado oil

  • 8 oz bag of plant-based cheese

I got all of these ingredients from ALDI, except for the cheese and the leek I got from Whole Foods!


Directions

I am not one to follow rules let alone recipes LOL. I sorta eyeball everything, swap stuff out and somehow it always turns out good (thank you mom for my cooking intuition). I have made different variations of this recipe and they all turned out fantastic, so I think you'll be fine! But, feel free to use different pasta or sauce, or cheese. This is just the recipe I used in these pictures.

  1. Preheat oven to 425

  2. In a large pan, sauteé avocado oil, green onions, and the chopped leek

  3. In a separate pot, boil water for pasta

  4. After the leeks and onions are slightly brown, stir in the chopped cauliflower

  5. Add in pasta sauce and 1 jar of water

  6. Bring sauce mixture to boil, add salt and pepper

  7. Cook pasta half the time as instructed on the box, drain and toss in the sauce mixture

  8. Stir in half the bag of cheese into the pan

  9. Top with the remaining cheese and place in the oven (I didn't do this in the pictures but I have before and it gives it some texture!!)

  10. Bake for 15 minutes

  11. Enjoy!
