Teriyaki Chicken Lettuce Wraps

My mom and I have been making lettuce wraps since 2014 when they first came out okay!! We did it FIRST.

JK haha but seriously, we made these all the time when I was in high school!! I think we usually used ground turkey but I like the chicken version better. You could also use tofu or seitan if you wanted to make it plant-based!


Teriyaki Chicken Lettuce Wraps

Makes 4 servings

Prep time: 5 min

Cook time: 30 min


Ingredients

  • 2 chicken breasts, organic, cage-free, with no antibiotics or hormones!!!!!!

    • chopped into small pieces

  • 1/2 of a white onion, chopped

  • 1/2 cup of salted peanuts

  • 1/2 cup of organic shredded carrots

  • 1/2 cup of organic sprouts

  • 4 TBSP avocado oil

  • 2 tsp of garlic

  • 2 tsp of ginger

  • 1/2 bottle of teriyaki sauce

  • 1/4 cup of soy sauce

  • 1 head of organic romaine lettuce

Again, I got most of these ingredients from ALDI! So cheap, and a lot of organic options :,)


Directions

  1. In a large pan, sauteé oil, onions, garlic, and ginger

  2. After slightly brown, add in chopped chicken breast and place lid on top. Cook until pink is gone (if you have a meat thermometer, cook until 160 degrees)

  3. Toss in peanuts, carrots, soy sauce, teriyaki sauce, and sprouts

  4. Serve on top of romaine leaves and eat like a taco!!
